Unable to remove "From" field from outgoing e-mails in Outlook Classic

Hello community!

Need your help with this one. While trying to send e-mails from Outlook classic (Windows 11), I'm unable to remove the "From" field under Options (see below):

I can remove (if I wanted) the "BCC" field but NOT the "From" field.
I have ONLY one mail profile installed.

I've deleted and re-created the profiles, without any luck in correcting this.

The ONLY way that I was able to TEMPORARILY correct this (because after 2 days...it did it again), was to completely uninstall Microsoft 365 AND some folders pertaining to the Outlook.
Then I re-installed a fresh copy of MS 365, and then I was able to remove the "From" field of outgoing e-mails.

But, after a couple of days, there it was: the "From" field up again and no way to remove it.

Has someone encountered the same issue?
