Removing existing teams or channels from Microsoft Teams when no longer needed
Hi Francesca, My name is Umar and I'd be happy to help you out with your question.

Unfortunately, the recovery options for deleted Teams and their associated SharePoint sites depend on the time passed since deletion.
- For Teams:
Soft-deleted Teams: If the Teams and associated SharePoint site were deleted less than 30 days ago, they are considered "soft-deleted" and can be restored by a global administrator or group administrator. This can be done through the Microsoft 365 admin center.
Permanently deleted Teams: If more than 30 days have passed since deletion, the Teams and associated SharePoint site are permanently deleted and cannot be recovered.
- For OneNote:
OneDrive version: If the OneNote notebook was also stored in OneDrive, it might still be recoverable even if the Teams and SharePoint site are permanently deleted. The recovery period for OneDrive files is 90 days. You can try restoring the notebook from the OneDrive recycle bin.
SharePoint version: If the OneNote notebook was only stored in the Teams and SharePoint site, it cannot be recovered after the site is permanently deleted.
I hope this information is helpful. Please let me know if you have any other questions.
